Boon’s Noodles @ Golden Mile Food Centre – Delicious Handmade Mee Hoon Kueh By Ex-Rafflesian For Under $6 (Media)

Talk about a business born of love. Opened by Raffles Institution alumnus Chan Boon Wee and his wife Florence, Boon’s Noodles is a handmade ban mian specialist operating at Golden Mile Food Centre, one of Singapore’s many meccas for local cuisine.

With the support of his wife Florence and his father-in-law, Boon Wee hand makes almost all the components of his beloved dishes from scratch, from the noodles to even the chilli sauce and ikan billis (more on that later). Operations during the lunchtime rush hour is a systematic affair, with Boon Wee cooking up a storm while Florence and her father plate and serve the food.

One of the many labours of love at Boon’s Noodles is the Mee Hoon Kueh Soup ($3.50). Served in a light brown broth, the broad, hand-torn strands are perfectly al dente. Digging in, we also found every spoonful of umami soup to be chok-full of ingredients like fried ikan billis, mushrooms, sayur manis, and minced meat. Overall, a rich and nourishing soup that does not resort to artificial flavouring to give the noodles that extra oomph.

The Seafood Soup ($4.50 – $5.50) is another noteworthy dish that comprises prawns and batang fish slices. While I hoped for more emphasis on the seafood aspect in this dish, the ingredients are nevertheless as rich and flavourful. I also prefer this broth as the prawn adds some sweetness that cuts through the savoury flavours.

I was also pretty impressed by how consistent the texture of the ban mian was, given the fact it is one of the handmade noodles at this stall. Thumbs up!

Feeling up for some dry noodles? The You Mian Dry ($3.50) is another popular option that combines medium sized strands with shallot oil and black sauce. Stir this thoroughly and enjoy! This soup-less dish is ideal if you want to slurp up some noodles without battling the stifling heat that comes with dining at hawker centres.

Come early and you’ll also get to enjoy some sauce coated noodles with onsen egg, which is made in limited quantities to avoid wastage. All dishes are also served with an egg for you to mix with your noodles.

Completing your noodle eating experience is Boon’s Noodle’s homemade chilli, a recipe passed from the hawkerpreneurs’ relative. Fiery and potent, this bright red-hued sauce is highly recommended with the dry You Mian.

With so much goodness packed in one bowl, it’s surprising to see Boon’s Noodles price their food so cheaply. Their sheer dedication to sourcing ingredients of the highest quality for their customers is also really admirable. Hope to see this seven months old stall enjoy the business it deserves soon!
