Chuan Fried Hokkien Prawn Mee @ Bedok Reservoir Road, Kaki Bukit – Traditional Hokkien Mee with Plenty of Wok Hei

Hokkien mee is one of those deceptively simple dishes that demand a world of time and effort to cook and perfect. So when a stall opens up selling this very dish, best not to underestimate their dedication and skill.  

Chuan Fried Hokkien Prawn Mee is a relatively new stall located a stone’s throw from Kaki Bukit MRT Station, and the joint venture of two partners who coincidentally share the same name.

Preparation from scratch is an organised affair, with one of the partners arriving as early as 2am daily to start work, including the prawn and pork broth which is simmered for no less than five hours using generous amounts of fried prawn heads and pork bones.

By 9am, Chuan Fried Hokkien Prawn Mee is just about ready to go, when the other Chuan arrives to fry the noodles till the last plate is served around 8pm.

The Hokkien mee is available in two portions – $5 for Regular, and $8 for Large. Customers can also top up $2 for extra prawns, sotong, and pork belly. 

The first thing that stands out about this Hokkien mee is the smokiness, a result of the Chuans’ dedication to giving every batch of noodles a proper cook which takes almost 15 minutes. It’s worth the wait, though, considering the deliciousness of the wok hey. Ingredients are also plump and fresh, making this plate pretty bang for buck considering the portions. I also like that the mee is on the drier side, but each strand has soaked up very last bit of flavour from the broth. 

Those seeking an extra kick can try the housemade sambal chili, whose take-no-prisoner level of heat will set tastebuds aflame. The extra pork lard is a definite bonus – calories, who?

All things considered, Chuan Fried Hokkien Prawn Mee is a solid addition to the east side. It’s evident that owners are dedicated to serving delicious plates with an emphasis on quality. Worth checking out if you’re around Kaki Bukit!
