Enishi Ramen @ International Plaza, Tanjong Pagar – Michelin Bib Gourmand Ramen from Kobe; Limited Dan Dan Noodles Served Daily

While it’s no secret that Tanjong Pagar is Singapore’s capital of Japanese food, there are still some hidden gems tucked away in little pockets of this central enclave. Today’s best-kept secret is Enishi Ramen, a Michelin Bib Gourmand ramen hailing from Kobe, Japan.

Located on the second level of International Plaza, Enishi Ramen is a no-frills ramen shop that sells no more than 100 bowls per day, supposedly to retain the quality of its cooking. With less than twenty seats available around the counter, it’s easy to see why Enishi Ramen is home to snaking queues daily. 

A literal hole-in-the-wall,  Enishi Ramen serves two items daily, dan dan men and dashi ramen

The Dan Dan Noodles ($19.80) are what put it on many foodies’ radar, with three levels of heat according to your liking. The colourful array of authentic, imported ingredients is enough to whet appetites, and the result is a robust mix of ingredients ranging from savoury and smoky, to sour and nutty. Ingredients include flame-torched pork, peanuts, cut vegetables, and Japanese sour pickles.

Dan Dan Noodles ($19.80)

Enishi Ramen recommends mixing the noodles for 20 seconds, with ingredients stirred from bottom to top at least three times to coat the noodles with the peanut-forward sauce. Biting in, I was wowed by the distinct al dente texture of the noodles, with an almost handmade consistency that made it very comforting to slurp up. The taste profile of this dish is complex, yet rich and hearty. 

Of course, every order of Dan Dan Noodles is accompanied by a free serving of rice to mop up that delicious sauce! Wash it all down with dashi soup.

Speaking of dashi, don’t sleep on Enishi Ramen’s other dish, the Japanese Dashi Ramen ($18.80 – $21.80) which serves the same, bouncy noodles with chashu, ajitama, and duck slices. The broth is incredibly robust and clear, and the ingredients come together harmoniously. If you’ve always wanted to try Enishi Ramen’s noodles without all the decadence of its sauce, I highly recommend this soup-based dish!

Japanese Dashi Ramen ($18.80 for Basic, $19.80 for Regular, $21.80 for Special)

With a focus on quality ingredients, Enishi Ramen’s offerings are well worth the calories. Stop by and give these sought-after noodles a try – after all, it’s only one of two places where you can do so!
