Amara Hotel on Tras Street, Tanjong Pagar, returns for a propitious Lunar New Year feast complete with festive goodies, buffets, and tastefully done reunion dinners in the Year of the Pig.
Begin your festive feast with a signature Prosperity Eight Treasures Yu Sheng ($88++ for small, $118++ for large) artfully arranged in the shape of a pig’s face, the Chinese Zodiac animal for 2019. Complete with fresh sashimi and two kinds of fish roe, Amara Hotel’s rendition of this classic Chinese starter is both a visual and taste fest. A Vegetarian Fruit Yu Sheng ($58++ for small, $88++ for large) is also available.
The Braised Pumpkin Soup with Superior Fish Maw ($20++ ala carte, available in the Silk Road Auspicious Reunion Set Meal) is a comforting broth that delights and nourishes. The sweetness of the braised pumpkin is perfectly complemented by generous morsels of mushroom, fish maw, and meat, complete with red dates for extra colour and nourishment. A healthy start to the meal that whet our appetites for the upcoming dishes.
Indulge your tastebuds with the Soy Baked Sea Perch with Spinach and Bonito Sauce (available in the Silk Road Majestic Reunion and Opulent Spring Sets), which combines Chinese and Japanese influences. The fresh sea perch falls apart easily, and yields a satisfying umami taste that is not too overwhelming.
For buffet goers at Amara Hotel’s Element, the Braised Pork Ribs in Black Beer is a unique dish that features generous bites of braised pork ribs with a slightly sweet, alcoholic aftertaste. Not my thing personally, as I prefer my meats savoury, but something pork and beer lovers can look out for at the buffet line.
One of my favourites from Amara Hotel’s festive highlights – Shenyang Dumplings ($18 – $28++ ala carte, available in the Silk Road Joyful Spring Set ) – are meticulously handmade, with delicious stuffings encased in the sturdy dumpling skin. Could not stop myself from having more of these!
The highlight of Amara Hotel’s Lunar New Year selections, the Beijing Roasted Duck ($68++ ala carte) is expertly carved, with the crispy skin pre-wrapped with vegetables and sauce for your enjoyment. A must have if you are dining at Silk Road, Amara Hotel’s Chinese restaurant.
To round off your Reunion Dinner on 4 February, the substantially portioned Wok-Fried Fragrant Rice with Chinese Sausage and Mushroom is best paired with a dash of spicy Mala Chicken.
Diners at Amara Hotel’s Reunion Dinner will be in for a special treat: a dessert buffet helmed by a new addition to the culinary team, who apparently competed at the Luxembourg Culinary World Cup. Other than bite-sized tarts, cakes, and traditional nyonya kueh, diners can also sample beautifully crafted creations like Gold Ingot Fruit Cake ($78++) and Cherry Blossom Sugee Cake ($68++).
