Pasta is one of those unassuming ingredients that when treated properly, can be transformed into a base for some of the most incredible dishes. And Bar Cicheti has certainly proven its chops in it, despite its founder and chef having never set foot in Italy.
If you’ve always wanted to try Bar Cicheti’s nifty, handmade pastas at its home turf on Jiak Chuan Road in Outram Park, the Degustazione ($88++) is perfect for you.

Spanning five courses, Bar Cicheti’s Degustazione is available Monday through Thursday, making it the ultimate perk-me-up for those seeking after-work comfort in a bowl of handmade pasta. You can even top up $40 for a Sommakase 2.0 Pairing, which pairs some generous pours of wines and sake with your food.
Degustazione opens with the Aged Amberjack, a toothsome appetiser comprising carpaccio, shio kombu, tonburi, caviar, parsley, and basil oil, flavoured with heirloom tomato water.
The fatty amberjack melts in your mouth, and the heirloom tomato water adds some fresh notes which balance out the richness of the fish and caviar.

Next up is the Saffron Stracci, whose unique serving method is sure to raise a few eyebrows around the dinner table. This pasta dish is served with a homemade broth that enhances its earthy flavours, while the mascarpone and ricotta add just the right amount of richness.

The third dish is where Bar Cicheti picks up the pace. Tuck into the Taglioini which is laced with Elixir di Gambero and Rosso di Mazara. Seafood lovers will enjoy the contrast between the subtle spices of the pasta and the shrimp’s slightly sweet notes.

The main stretch of Degustazione ends on an undeniably rich note, and this is where Bar Cicheti saves the best for last. Biting into the Scarpinocc, you can taste the fatty duck marmalade and foie gras, contrasted with crunchy trumpet zucchini. Smothered in marasala jus, you can taste every bit of fattiness and richness in each bite, yet it doesn’t leave you feeling bloated.

Dessert is a refreshing Figs Almond Sucree that resets your palate after an evening of indulgence. I especially enjoyed the Lychee & Lime Sorbet that was paired with the black figs!

Bar Cicheti’s Degustazione is a good introduction to the diverse world of pasta, as well as its simple, but delicious Italian dishes. Do note that the entire table is required to order the same set.
