Gyu San Japanese Sando & Charcoal Bar @ Forum The Shopping Mall, Orchard – Enjoy Hamburg Cooked A La Minute in an Open Concept

Japanese F&B brand, Gyu San, is not resting on its laurels. The restaurant known for its wagyu sando has recently expanded its Orchard outlet to include a brand new concept, Gyu San Japanese Sando & Charcoal Bar. Located inside Forum The Shopping Mall, it offers a sole item on its menu: wagyu hamburg grilled over binchotan.

While Gyu San Japanese Sando allows diners to people-watch from an alfresco setting, Gyu San Charcoal Bar’s atmosphere is more cozy and intimate, yet still buzzing with activity around the open-concept grill station.

While there are other tables placed around the walls, possibly to maximise the restaurant’s limited space, I highly recommend getting a seat at the counter where you can watch the teams prepare each hamburg set to order.

The Gyu San Hamburg Set ($23.80++) sets out to make wagyu more accessible to the masses by way of more wallet-friendly prices. Each set comprises two 90g hamburg patties accompanied by South Uonuma Koshihikari rice from Niigata, as well as miso soup and salad.

The best way to savour the patties is in two parts – first on its own to experience its natural flavours, then with one of eight condiments that include traditional yuzu kosho to chimichurri and Singaporean sambal. The patties are flavourful and juicy, with a smoky aftertaste as a result of their preparation on the grill. 

A top of $2.50++ and above snags you some extra grilled vegetables, such as shiitake and asparagus. I also recommend adding an onsen egg for a delectable finish to your hamburg and rice.  Last but not least, finish it off with some Chawanmushi ($3.50++) served piping hot.
