You’ve heard of build-your-own pasta and build-your-own sandwiches. But how about build-your-own porridge? The quintessentially Singaporean breakfast staple has been given its own DIY twist at Peng Jia Zhou, a humble porridge stall tucked away in ESR BizPark Chai Chee on the east side of Singapore.

Here, diners can mix and match ingredients ranging from cuttlefish and clams to oysters and snow crabsticks. Fish and meat slices are available as well. Ingredients are priced at $5 per 100g, similar to mala stalls islandwide. Egg add-ons like century egg and salted egg are priced at $0.50 each.

With 16 ingredients to choose from, I was truly spoilt for choice. The porridge is starchy and comforting, with the ingredients cooked well and distributed evenly. I would say $5 is pretty reasonable considering the variety you can pack into your bowl.

Feeling extra peckish? Choose from a variety of side dishes such as Pong’s Century Egg ($5.90) and Hakka Style Fried Pork ($5.90). The fried pork is toothsome and crispy, making for a nice indulgence on top of the porridge.

Porridge is one of those tried-and-tested dishes that you would least expect seeing a modern twist to, so it’s nice that this new generation of hawkers putting their own spint on it. While the location is a little out of the way, I can see myself indulging in a bowl of their DIY porridge when the weather suits it.
