Whether you’re a French pastry purist or one for whacky fillings and flavours, you can’t deny that Brotherbird Bakehouse has become one of Singapore’s leading institutions on the croissant. And if the long queues and soldout notices are anything to go by, it seems many share this sentiment.
Good news if you’re residing in the east – Brotherbird Bakehouse is running an extended popup at Shell Station MAC Drive-Thru till 31 August, where you can get your hands on their goodies including the sought-after August Edition box!
Like its dine-in counterparts, the kiosk is done up in a minimalist fashion, with its signature steel displays and its iconic bird signage indicating its presence. The first time I visited around 2pm on a weekend, it was fully sold out, and I lucked out the following weekend after a late breakfast.
With over 14 sweet and savoury flavours, it’s easy to be spoilt for choice. A couple of other walk-in customers could be spotted hovering around the enticing array of pastires. It supposedly sells out within 2 – 3 hours of opening, so it’s best to head over early to avoid disappointment.
After trying their famed croissants, I’m convinced that Brotherbird’s goods must be tasted to be believed. Chocolate-based flavours like Rocher Croissant ($5+) and Churros Croissant ($5+) are sinfully rich with their dark chocolate glaze or filling. While others like Almond Twice-Baked ($6+) and Lemon Meringue Croissant ($5+) win my vote for their zesty taste profile.
The croissants themselves are light and airy, making them a perfect counterbalance to the richness within.

Brotherbird Bakehouse is a definite treat for the sweet-toothed. For savoury-leaning palates, the Ham & Cheddar Chicken Twice-Baked ($6+) is a wholesome flavour that brings to mind comforting sandwiches for after-school lunches. The Mentaiko Prawn Twice-Baked ($6.50+) is another Japanese-inspired flavour that leans on the rich side.
