Japanese food lovers are incredibly privileged it seems, with multiple Japan-based food brands setting up overseas outposts in our country. Not that I’m complaining!
Opened in 2006 by Chef Atsushi, Konjiki Hototogisu has grown tremendously, from a humble eight-seater stall in Shibuya, to a One Michelin Starred brand in 2019 and 2020 after attaining the Tokyo Michelin Bib Gourmand title four years in a row.
With its flagship store in CHIJMES, the Great World branch opened in late 2018 during the mall’s revamp, with an exclusive Oyster Ramen flavour made from oyster consommé, a creation of Chef Atsushi’s.
The self-described clear and smooth oyster consommé is brewed through hours of slow cooking at a lower temperature, with roasted paprika added to the base. The Oyster Shio Ramen ($15.90) is supposedly best enjoyed in multiple ways: through the pure oyster consommé, original oyster oil, oyster paste, and finally with a fragrant garlic lemon butter infused soup.
As you can imagine – the base for the Oyster Shio Ramen is rich and flavourful, with many different sources of umami-ness coming together in every spoonful. I truly enjoyed every bite, and the oyster paste was not overly briny! There is also a Paitan version with a creamier base.

Oysters not up your alley? Test your spice tolerance with the Super Black Spicy ($14.90), which is marked with three chilli icons on the menu. This take-no-prisoner flavour is drizzled with Sriracha sauce and served with a housemade super spicy black paste. Definitely not for the faint-hearted.
