The new 84-seater outlet at Marina Square takes after the aesthetics and layout of its preceding counterparts, with stylish ceiling lanterns adding a touch of tradition to this modern dining area. From the outside, you can even spot the kitchen where Kanada-ya’s staff work tirelessly to churn out ’em noods.

Kanada-ya has certainly come a long way from its opening in Japan over a decade ago. Chef Kanada’s transition from a professional keirin racer to ramen shop owner, while not without its setbacks, has seen immense success all the way in London, where it was voted No.1 by The Telegraph. 

It secret to success lies in its rich pork bone broth, which is boiled for 18 hours before mixing in a secret sauce. This flavourful, umami soup base is present in all of Kanada-ya’s ramen flavours, with the exception of the 100% chicken broth based ramen

Not to be missed is the so-called limited edition Truffle Ramen ($22.90 – $26.90), otherwise known as London’s Favourite. With only 20 bowls available every day, you’ll have to come early or try your luck. The truffle-laced aroma greets you before your bowl arrives at your table, a prelude to the rich, comforting flavours that are about to greet your tastebuds. The truffle marinated belly chashu melts in your mouth with a tenderness that’s hard to beat, and the truffle jelly adds a touch more richness. Simple, yet stunning, as the menu claims.
